It’s probably too soon to be sharing another cookie dough ball recipe. I thought long and hard about whether I should just tuck this recipe away for a rainy day. But the last couple of weeks, aside from being overwhelmingly busy and exhausting, have seen a lot of unsuccessful recipe testing and unfortunate photo taking. It happens. Some weekends it seems like everything I touch in the kitchen turns to gold, and others… well, let’s just say I ate a lot of waffles yesterday and enjoyed very few of them.

Whoever first thought to combine chocolate and mint deserves some kind of lifetime achievement award, at least in my books. It’s one of my all-time favourite sweet pairings, so much so that I was rarely found without a box of Junior Mints in my purse during my high school years. These days, I eschew those high-fructose corn syrup droplets of yum in favour of more natural alternatives. I have found some pretty fantastic organic dark chocolate + mint bars over the last few years that satisfy the craving and taste infinitely better, but today I wanted to give a nod to the Irish side of my heritage and celebrate the holiday in a healthful way.
Sometimes you just really need a quick sugar fix, and sometimes, you don’t want to wait 50 minutes and wash 10 dishes just to satisfy that craving. Yet the alternative – a manufactured, chemical-laden, and nutritionally void candy bar – is equally unappealing.
What’s a girl to do?
I know what you’re thinking. Chocolate… and avocado? These things do not go together! Well, let me tell you, there is a party in my mouth right now and you’re all invited! This pudding is amazing. It has a wonderful depth of flavour, and offers such a thick and creamy chocolatey explosion in your mouth, you’ll want to eat it all in one sitting. I nearly did, believe me. It is best served cold, but if you’re anything like me (ie. impatient) you will want to eat a least a little right away. I literally scraped down the sides of my blender with my fingers so as not to waste even a drop. This is literally going to knock your socks off! I am not a morning person by any stretch of the imagination – mid-morning, however, I’m all about (no matter how hard people laugh when I tell them so) – but I am 100% a morning gym person. I absolutely hate working out in the evening, especially after I’ve worked all day. I have less energy, I’m probably still digesting lunch, and I just want to be at home in my jammies. I’ll still do it, since I never skip a workout unless I’m basically at death’s door, but I won’t be happy about it. All of which brings us to this magic in a glass. Tell me I have to wake up at 6am for work and I’m all sighs and groans, but tell me I have time to go to the gym before work/class/life if I wake up at 6? Score!
