Chocolate Chip Pumpkin Muffins + Date Puree Tutorial (gluten free)


Have you ever had one of those mornings where nothing seems to go the way you had planned? As if, rather than you waking up on the wrong side of the bed, the rest of the cosmos did? I had just such a morning a couple of weeks ago. I woke up looking forward to having a leisurely morning; I was going to work in the evening, which means I could wake up late, linger over coffee and breakfast, and test out a pumpkin muffin recipe, all without breaking a sweat trying to rush out the door. Such was the plan, anyway. Instead, I woke up to the sound of running water and Conor’s poor step-mom in a state of panic. The massive fish tank in the basement was somehow, steadily, leaking out of the bottom, and a large puddle of water had already accrued on the floor. Pumpkin Pie Granola (gluten free, vegan)


Well, this is it… my last recipe posting until we get back from Europe in August. Not to worry, I won’t be abandoning you lovely people entirely, but for obvious reasons I won’t be doing a whole lot of cooking over the next two months.

I’m in the middle of packing, and this granola is definitely on my to-bring list! I know finding gluten free breakfast foods is going to be a challenge, so it’ll be great to have this on hand for those extra hungry mornings or for something to much on in the afternoon if we’re trekking off the beaten path – apple sandwiches, anyone? This granola is great on it’s own or in some almond milk or yogurt as a homemade cereal. The pictures don’t do it justice, but I promise, the moment you get a whiff of this baking in the oven, you’ll be sold! It is just heavenly. Continue reading

Chai Tea Infused Chocolate Avocado Pudding (gluten free, vegan)


I know what you’re thinking. Chocolate… and avocado? These things do not go together! Well, let me tell you, there is a party in my mouth right now and you’re all invited! This pudding is amazing. It has a wonderful depth of flavour, and offers such a thick and creamy chocolatey explosion in your mouth, you’ll want to eat it all in one sitting. I nearly did, believe me. It is best served cold, but if you’re anything like me (ie. impatient) you will want to eat a least a little right away. I literally scraped down the sides of my blender with my fingers so as not to waste even a drop. For this reason, I will have to be slightly vague on how many people this serves – you might not want to share! Pumpkin Sage Risotto (gluten free)

Every fall I start anew my love affair with pumpkins. Pumpkin pie, pumpkin granola, roast pumpkin, pumpkin spice lattes… my goodness is it ever delicious! Conor will look at me strangely and shake his head a little when I fill our shopping cart with beautiful little sugar pumpkins, and then patiently help me prepare them for roasting. I still have a few bags of pumpkin puree in my freezer, just waiting to be used for pie, oatmeal, or baked goodies! It is 100% worth the effort, as the flavour of canned pumpkin just cannot compete, and it is so convenient to have some on hand for whenever I like. So while this recipe is decidedly out of season, I had some leftover chopped pumpkin in my freezer from the last time I made risotto just begging to be used. Continue reading
